Smoked Prime Rib

1 prime rib roast
rosemary
kosher salt
black pepper
cayenne pepper
paprika
garlic powder

  1. Preheat smoker or grill to 230°F.
  2. Prep your rib roast by generously seasoning it with rosemary, salt, pepper, cayenne pepper, paprika, and garlic powder.
  3. Cook for about 3 1/2 hours, until an internal temperature of 125°F is reached (for med-rare). (Time will depend on the size of your roast - count on about 20-30 minutes per pound.)
  4. Remove from the smoker and let rest for 15-20 minutes before slicing and serving.
