Grilled Scallops with Chili Powder

12 fresh sea scallops
Salt and pepper, to taste
Chili powder, to taste
Canola oil spray
Tools 
Large skillet 

  1. Rinse your scallops and dry really well. Carefully remove the "foot" from each scallop.
  2. Spray your skillet or griddle with canola oil spray and heat over medium-high until very hot.
  3. Season the scallops with salt, pepper, and chili powder and place in the hot skillet.
  4. Cook for 1-2 minutes on each side, until golden brown. (Be sure not to overcook or they will become rubbery.)
  5. Serve immediately.
