12 fresh sea scallops
Salt and pepper, to taste
Chili powder, to taste
Canola oil spray
- Rinse your scallops and dry really well. Carefully remove the "foot" from each scallop.
- Spray your skillet or griddle with canola oil spray and heat over medium-high until very hot.
- Season the scallops with salt, pepper, and chili powder and place in the hot skillet.
- Cook for 1-2 minutes on each side, until golden brown. (Be sure not to overcook or they will become rubbery.)
- Serve immediately.
